Your diet likely doesn’t consistent of many root vegetables and I can guarantee that if you have kids, they may not have tried more than a carrot for a root vegetable. I’m going to introduce you to parsnips which is one root vegetable that when grilled, takes on a flavor very similar to French fries.

That’s why I’m calling this recipe my Smoked Parsnip Fries with Spicy Honey Glaze. As easy to prepare as it’s cousin the carrot, parsnips take no time at all to prepare and smoke on the grill. Go to the market and get yourself about 2 pounds of this lesser used vegetable and let’s convert you from the potato to the parsnip!

Hopefully, you enjoyed our previous segment on adding smoke flavor to seasonal peaches. We sure have had fun providing you with different techniques to add the natural flavor of wood. Now is the fun part where you take those smoked fruit pieces and turn them into something great.

I’m going to introduce you to a super flavorful and balanced peach cake done in the style of the traditional pineapple upside down cake – only with peaches! For this recipe you’ll need three peaches but don’t waste the perfect time to do some extras so you can make all our great smoked peach recipes.

Zucchini Rolls– For those of us who love to grow zucchini you know just how heavy a harvest you can end up with. Then the question is: what to do with all those zucchinis? Let me offer up a suggestion. Zucchini ribbon rolls are a super easy way to make a quick appetizer or a great side dish. In fact, if you don’t need the fanciness of the ribbons, you can modify this recipe which I’ll cover in this posting. I’ll be taking the zucchini ribbons to the gas grill which I’ve equipped with wood chunks and provide a subtle smokiness to the zucchini before filling with a flavorful ricotta-basil-Parmesan mixture that easily could be smoked as well. Pick out some of your larger zucchini and get ready to make a super appetizer or side dish with your harvest.

Wood fired-stuffed tomato–With tomatoes readily available most any time of the year, I’ve got a great recipe for a stuffed tomato that is healthy on the body and waistline. But before stuffing these tomatoes, I’m going to introduce them to smoke on my gas grill equipped with wood chunks in cherry and maple, for an added depth of flavor that works so well with acidic tomato.

One of my favorite cuts of beef to smoke and grill is the beef flank riblet. This is a cut of beef short rib known as flanken. In the flanken style of short rib, this thin cut, which is about 1/2-inch thick, goes across the bones so that each slice contains a few pieces of bone rather than between the bones as is done in traditional short ribs.

This is a popular way to cut the short ribs if you’re going for a Korean barbecue which we are kind of doing with our marinade that has Asian influences. I recommend doing about 4 pounds of flanken style short rib though today I’m doing 8 lbs. which means I’m doubling the recipe. The best part is these ribs don’t take very long to smoke on the grill.

With the arrival of Spring on the East Coast, we have an opportunity to get some fresh vegetables and one of my favorites to locate are peas. Today, I’m going to remove fresh peas from their pods and wood-fire them using wood chunks on the gas grill. Then I’ll produce a tasty pea mash that I plan to serve on toasted bread for a healthy snack or appetizer. The time consuming part of this recipe is the removal of the peas but this task will be worth it.

Time to get to the store and locate about 2-1/2 pounds of fresh peas and fire up the grill for our flavorful take on pea mash.

Taking a page from Chef Alice Waters, we are making our version of the baked goat cheese salad by wood baking the goat cheese rounds on the grill using a two-zone cooking method and wood chunks for smoky flavor. Then making garlic crostini for the croutons on the charcoal grill to serve alongside this fabulous salad dish. A recipe that can be a salad course or an entrée on its own, we also give you an easy way to make this into an appetizer. Purchase 12 ounces of quality goat cheese in log form and let’s get grilling.

I’m going to show you how easy it is to cook a cake on the gas grill using wood chunks for added flavor. I simply love how chocolate reacts to smoke vapor and this chocolate recipe of mine is simply outstanding for the grill.

The gas grill was originally intended to provide for a quick cook method but I view this as an extension of the indoor kitchen as the grill really is an oven. I’m going to turn my grill into a wood-burning oven by incorporating a smoker box that I’ve added cherry wood chunks too.

I love making traditional baking items on the grill especially when wood is added for a kick of flavor that can make some normal recipes totally unique. That’s how I feel about this recipe for zucchini-coconut-lime bread/cake. It has to have two names as I’m giving you two finishes so you have something more savory like a bread and something sweet like a dessert.
