Yes, prime rib is expensive and likely the reason so many are fearful to take this cut of beef to the grill. I’m going to take away that fear and show you just how your grill will respect this cut and produce the tender, buttery, crusty outside roast you want.

Although there are different opinions on whether to make a roast with the ribs intact or removed, I am someone who prefers to cook with the ribs in. I’ll give you tips on doing a boneless version as well if that is your preference.

Hopefully, you enjoyed our previous segment on adding smoke flavor to seasonal peaches. We sure have had fun providing you with different techniques to add the natural flavor of wood. Now is the fun part where you take those smoked fruit pieces and turn them into something great.

I’m going to introduce you to a super flavorful and balanced peach cake done in the style of the traditional pineapple upside down cake – only with peaches! Although Spam® may not be your go to meat choice, there are a lot of recipes that have been created around this canned meat. With 6 primary ingredients – pork with ham, potato starch, water, salt, sugar and sodium nitrate – Spam® was key to feeding our troops during WWII and retained some popularity since its introduction in 1937. Although this is a high sodium food item, it can offer some easy meal prep and is super easy to smoke. In fact, due to the small size of the servings, I’m going to show you how to grill-smoke this using my chimney starter only and a grill rack. Then I’ll take these charry slices and make an Asian Inspired Spam® Slider. Go select your favorite variety of Spam® and let’s get this smoked in no time!

Clams are at peak season and the perfect time to add some wood flavoring to this hot season favorite. We’ll show you how on a charcoal grill then use our golden, crispy clam meat in a super light and flavorful dish we call ‘Wood Fired Clams in Orzo with Dijon Caper Sauce’. With the arrival of Spring on the East Coast, we have an opportunity to get some fresh vegetables and one of my favorites to locate are peas. Today, I’m going to remove fresh peas from their pods and wood-fire them using wood chunks on the gas grill. Then I’ll produce a tasty pea mash that I plan to serve on toasted bread for a healthy snack or appetizer. The time consuming part of this recipe is the removal of the peas but this task will be worth it.

Time to get to the store and locate about 2-1/2 pounds of fresh peas and fire up the grill for our flavorful take on pea mash.
