Una gran idea de receta con el uso de espárragos cocinado y filete flanco. Mientras los filetes flancos enrollados se estén cocinando en la parrilla de carbón/parrilla de gas o aun en el horno!

Filete Flanco Enrollado- Ingredientes:

  • espárragos cocinado
  • 2-3 libras de filete flanco
  • 4 onzas de hojas de espinacas
  • Aceite de oliva (o pesto)
  • 4 onzas de queso de mozarela
  • Pimienta y sal para un buen sabor

Si cocina con carbón o parrilla de gas use “doble” filete con trozos de madera para añadir un sabor adicional.

 

Preparando el filete

La idea es machacar el filete con un mazo de carne para ablandarlo. Me gusta cubrir el filete flanco con aceite de oliva, pimienta molida fresca, y kosher sal y ponerlo en plástico envuelto para marinarlo por lo menos de seis horas, pero prefiero marinarlo por la noche. Después de marinarlo, puedo empezar a ensamblar con los otros ingredientes.

Coloque el filete flanco y ponga las hojas de espinacas superponiéndolas en el proceso. Ahora tome las mitades de tronchos de espárragos y úntelas después. Finalmente, ponga el queso de mozarela y añade con sal y pimienta. Recuerde que, si el queso no está fresco, tendrá un poco de sal encima y se debe que tener cuidado añadiendo más sal. Ahora, empezando a lo largo de la parte más larga del filete flanco, empieza a rodarlo empacando el relleno. Después de que esté completamente enrodado, tome 6 pulgadas de cordel de carne precortada y se ate alrededor del filete flanco enrollado cada dos pulgadas. Estas piezas llegaran a ser tamaños de porción. Corte el filete flanco entre los cordeles y ponga cada pieza de filete en una bandeja de hornear.

Cocinando filete de flanco enrollado

Cocine los filetes en una bandeja de hornear por aproximadamente 30 minutos. El filete flanco rendirá mucho jugo o líquido, para prevenir que se derrame use una rejilla de asar. Después de que el queso de mozarela se vuelva de color dorado, estará listo para sacarlo del horno. Deje que se descaliente por unos 5 a 10 minutos antes de servirlo.

Esto es solamente una idea de combinación de sabor que funciona muy bien con el filete y los espárragos asado. Otras combinaciones incluyen corazón de alcachofa, pimientos rojos asados, col rizada, y hasta quinoa si quiere añadir una textura de grano.

  • Baguette u otro pan estrecho (en una pizca, los chips de pita también funcionarán)
  • Aceite para rociar sobre las rebanadas de pan
  • 8 onzas de queso ricotta
  • Espárrago ahumado
  • 2 cucharadas de jugo de lima
  • Rodajas de pimiento aproximadamente 2 onzas
  • Aceitunas verdes aproximadamente 4 onzas
  • Pimiento fresco molido

Antes de mezclar los ingredientes al untar, corte rodajas de la baguette en 1,27 centímetros y colóquela en una bandeja del horno. Rocíe con aceite: cualquier tipo funcionará, aunque soy parcial a los aceites de sabores. Solo tuesta las rebanadas de pan hasta que estén doradas. En un tazón mediano, agregue la ricotta y mezcle suavemente para descomponer el queso hasta obtener un estado cremoso. Corte el espárrago ahumado ​​en dados y pliegue suavemente en la ricotta con el jugo de lima. Agregue pimiento molido fresco al gusto. Ponga a un lado el tazón y corte el pimiento y la aceituna verde. Coloque en un tazón pequeño.

Zucchini Rolls– For those of us who love to grow zucchini you know just how heavy a harvest you can end up with. Then the question is: what to do with all those zucchinis? Let me offer up a suggestion. Zucchini ribbon rolls are a super easy way to make a quick appetizer or a great side dish. Wood flavoured grilled Corn on the Cob Topped with Fresh Parsley

Have you ever thought of roasting fresh corn on your lp/gas grill and adding wood flavouring?

Our culinary team has produced a two-part video series outlining how we Wood flavoured grilled Corn on the grill! It is so easy to do, especially this time of year when the corn harvest is abundant! Add this as a great side to your dinner, make a wood-fired salsa with the corn, freeze the corn for grilling enjoyment in the middle of the winter season. Unless you are like us and we ate the full dozen just after the grilling and pictures.

Ingredients for Wood Grilled Fresh Corn:

  • Gas/LP grill
  • 1-2 dozen ears of corn with husks
  • 8-12 double filet Smokinlicious® wood chunks. (We used Sugar Maple but any species will work- consult the flavour chart)
  • 1 stick of butter
  • 1/2 cup of fresh parsley chopped
  • 1 hour of fun grilling time, the noise of the corn popping on the grill is free and will excite your guests!

There’s Nothing Like Grilled Fresh Corn

Yes, you can get corn all year by purchasing in the freezer section of your local grocer. Seriously though. Who wants frozen when by waiting nearly 10 months on the east coast you can have fabulous fresh corn? There is a taste difference between fresh and frozen!

On The Grill With Wood For Smoky Char

Corn is one of those vegetables that just begs to be put on the grill. There are many techniques but I prefer to remove the husks and silks, and grill my corn on the cob with wood chunks on the grill’s heat shields. In answer to the question about soaking the wood in water first – no, I do not do this step as I want my corn kernels to really crackle on the grill. Just see our posting on how to add wood chunks to the LP grill (http://www.smokinlicious.com/blog/how-to-turn-your-lpgas-grill-into-a-smoker/).

Perfect Wood Makes Perfect Char

SmokinLicious® double filet wood chunks are the perfect size for flavoring as well as fit on most grills. From start to finish, you can easily do a couple dozen ears of corn in about an hour. With this technique, I just need 4-5 wood chunks on one of the heat shields. That will provide enough smoke vapor to collect in the grill’s cooking area to ensure every ear is equally charred and flavored. Next, simply monitor for the need to turn the corn with tongs to produce an even char. Keep in mind, just like popcorn kernels, you will hear some of the raw corn kernels heat up and pop/crackle while cooking. This makes for the sweetest end to your cooking tasks!

So Many Recipe Options for Grilled Fresh Corn

Once I near the end of the corn’s cooking, I snip some fresh herbs from the garden like mint, parsley, and even lavender. I melt butter and add the chopped herbs to the pot. I then brush the nearly cooked corn with this aromatic mix and seal in all the great flavors – smoky, sweet, buttery – just perfect.

After I’ve consumed some of my masterpiece, I remove the kernels from the cob to a large bowl using a knife. This corn will be split into freezer bags and stored for winter recipe cooking that will allow me to bring back the taste of summer.

Slice off the charred kernels of four ears of corn, dice a Spanish onion and a grilled sweet pepper.
